Kothavarai Vatral is made from Cluster beans (Cyamopsis tetragonoloba). It is made by sun-drying or by dehydrating the Cluster beans, after which it is soaked in salted curd or buttermilk. After which it is dried, and the process is repeated until the Cluster beans absorb the curd and is dried to a crisp. Dried ones are packed. You deep-fry it and serve it along with any variety of rice, especially with dal rice, rasam rice, or curd rice.
